Praline Sweet Potato Casserole


This praline sweet potato casserole uses pecans (or walnuts, if preferred) to create a delicious combination of nutritious sweet potatoes and praline. This praline is a confection made of nuts, butter, and light brown sugar.

Praline Sweet Potatoes

6 lbs sweet potatoes
1 tablespoon canola oil
6 tablespoons butter
3/4 cup light brown sugar
1/2 cup chopped pecans or walnuts
1 tablespoon peeled grated fresh ginger
1 1/2 teaspoon ground cinnamon
1 1/2 teaspoon salt
3 cups mini marshmallows

How to Prepare:

Preheat oven to 450 degrees fahrenheit. Rub potatoes with oil and place on baking sheet. Bake until tender - about 45 minutes. Cool for 30 minutes and peel. Reduce oven to 350 degrees fahrenheit.

Meanwhile, in nonstick skillet, combine 4 tablespoons of butter, 1/4 cup light brown sugar and pecans (or walnuts) on medium heat. Cook until bubbly and nuts are toasted, about 5 minutes. Spoon into bottom of a 2 quart baking dish.

At medium speed, beat the sweet potatoes, ginger, cinnamon and salt with the remaining brown sugar and butter until smooth. Spoon over pecan mixture, top with marshmallows. Bake for 30 minutes or until hot and marshmallows are lightly browned.
