Apples and Sweet Potatoes

Smushed Apples and Sweet Potato Recipe

It tastes a lot like apple pie but healthier!"

Ingredients:

  • l/2 teaspoon ground allspice
  • 1 Granny Smith apple, peeled, cored, and sliced
  • 2 Tablespoons milk
  • 2 large sweet potatoes, peeled and diced
  • 2 Tablespoons butter
  • 1/4 cup white sugar
  • 1 teaspoon ground cinnamon

Preparation:

  1. Place the sweet potatoes in a medium saucepan with water to cover; bring to a boil.

  2. Reduce heat to medium and simmer for about 20 minutes or until tender. Remove from heat.

  3. Drain and set aside.

  4. Melt butter over low heat in a small saucepan.

  5. Mix in the sugar, cinnamon, and allspice. Add the apple slices and let simmer, covered, for 5 minutes or until the apples are tender.

  6. Add apple mixture and milk to the drained sweet potatoes. - Beat with an electric mixer until potatoes are mashed.

Yield: 6 servings.

Note: As a variation, you can mix in cloves or nutmeg. This is also delicious topped with brown sugar and pecans.



Apples and Sweet Potatoes

  • 6 medium size sweet potatoes
  • 1/2 cup brown sugar or 1/4 cup maple syrup
  • 1 1/2 cups of sliced apples, unpeeled
  • 1/2 teaspoon salt
  • 1 teaspoon of mace, optional
  • Apple juice or cider


How to prepare:

  1. Boil sweet potatoes until tender.
  2. Slice in 1/2 inch pieces.
  3. Butter a baking dish and put a layer of sweet potatoes in bottom, then a layer of apples and repeat the layering. The very top layer should be of apples.
  4. Sprinkle with sugar or syrup and salt.
  5. Bake in oven at 350 degrees Fahrenheit, for about 30 minutes.
