Sweet Potato Muffins

Here's a great sweet potato bread recipe...

A healthier version of a sweet potato muffin that I think everyone will love. Full of fiber and less fat... It uses some egg whites instead of whole eggs, whole wheat flour and bran. And, of course, those super nutritious sweet potatoes.

3/4 cup of oat bran
3/4 cup whole wheat flour
2/3 cup sugar, granulated
1 1/2 teaspoons of ground cinnamon
1 teaspoon baking powder
1 teaspoon baking soda
1/8 teaspoon of salt
1/2 cup apples, peeled and finely chopped
1 cup of mashed sweet potatoes
1 whole large egg
2 egg whites, large
3 tablespoons of vegetable oil
2/3 cup of plain yogurt

First preheat oven to 350 degrees F, then in a bowl combine the bran, flour, sugar, cinnamon, baking powder, baking soda, salt and apples. Add the sweet potatoes, egg, egg whites, oils and yogurt. Stir all ingredients thoroughly. Spray muffin tins with vegetable cooking spray, and pour 1/4 cup of batter per muffin. Bake approximately for 20 minutes.

Variation: add 1 cup of raisins or chopped pecans/walnuts.
